<p><strong>EASY, CREAMY GRAVY</strong></p>
<p><em>Yields about 2 cups of gravy</em></p>
<ul>
<li>¼ C tallow, ghee or butter (your fat of choice)</li>
<li>1 t onion powder</li>
<li>1 t garlic salt</li>
<li>1 T fresh rosemary (chopped)</li>
<li>1 t fresh cracked black pepper</li>
<li>3 C water</li>

<li><strong>Directions:</strong></li>
</ul>
<ol>
<li>Heat a large, deep skillet over medium heat. Add the fat, onion powder, garlic salt, rosemary and cracked pepper.</li>
<li>Cook until the fat has melted and the herbs are fragrant, about 2 minutes.</li>

Bring the mixture to a simmer, whisking occasionally and cook for 10-15 minutes to reduce and thicken the gravy.</li>
<li>Remove from the heat and allow to cool for 10 minutes before adding to a blender.</li>
<li>Blend with caution (hot liquids can cause the blender lid to pop off) on high speed until creamy in appearance. Keep warmed until serving.</li>

<p><strong>SWEET POTATO CREME BRULEE</strong></p>
<p><em>Yields 2 servings of Sweet Potato Creme Brulee</em></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2 T <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a></li>
<li>¼ C maple syrup</li>
<li>2 T molasses</li>
<li>1 C cooked and pureed sweet potato</li>
<li>1 T vanilla extract</li>
<li>2 t pumpkin pie spice</li>
<li>¼ t sea salt</li>
<li>14 oz. canned coconut milk, heated to simmering</li>
<li>2 T turbinado sugar</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>In a large bowl, combine the Shaklee Collagen 9 with the maple syrup and molasses. Stir well and set aside for 2-3 minutes to &#8220;bloom.&#8221;</li>
<li>Add the puréed sweet potato, vanilla extract, pumpkin pie spice, and sea salt to the bowl.</li>
<li>Whisk briskly until the mix is smooth.</li>
<li>Pour in the hot coconut milk and blend with an immersion blender until the gelatin is melted and the mixture has become very smooth.*</li>
<li>Portion the creme brûlée mix into two large ramekins.</li>
<li>Chill for a minimum 1 hour, or until the pudding has set.</li>
<li>Keep refrigerated until serving.</li>
</ol>
<p><strong>To serve</strong>:</p>
<ol>
<li>Place the ramekins in the freezer for 10-15 minutes before brulée-ing.  Pour approximately 1 tablespoon of turbinado sugar on the top of each pudding.</li>
<li>Turn the ramekin to spread the sugar and ensure there is an even coating across the top.</li>
<li>*Using a hand-held kitchen torch, evenly brown the sugar to caramelize it and create a crispy layer. Move quickly, as the heat from the flame can melt the pudding. Serve immediately.</li>
</ol>
<p><em>*Notes:  if your coconut milk is not hot enough to melt the gelatin, you can transfer the whole mix to a saucepan and gently heat it until the mix is smooth.  Use caution not to boil, as gelatin is sensitive to heat.</em></p>
<p><em>*If you don&#8217;t have a hand-held torch, the broiler in your oven can work to caramelize the sugar. You may not get as even of a browning and more of the pudding may melt due to the intense heat of the oven. Keep a close eye and remove it promptly. If it becomes overly melted, throw it into the freezer for 15 minutes and it should set up quickly with the sugar still caramelized.</em></p>
<p><strong>NO-BAKE GREEN BEAN CASSEROLE</strong></p>
<p><em>Yields 4 servings (as a side dish)</em></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>1 lb. green beans, ends trimmed</li>
<li>2 slices bacon, chopped small</li>
<li>½ lb. cremini mushrooms, sliced thick</li>
<li>2 cloves garlic, minced</li>
<li>2 sprigs fresh thyme, leaves removed</li>
<li>¼ C white wine (or sub lemon juice)</li>
<li>½ C coconut cream* (can sub heavy cream)</li>
<li>2 scoops <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a></li>
<li>2 t arrowroot starch</li>
<li>½ t sea salt</li>
<li>¼ t ground pepper</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Bring a large pot of water to a boil. Add a pinch of sea salt and the green beans to the pot. Cook 3-4 minutes and remove them into a large bowl of ice water (this will quickly stop the cooking). Set aside for later.</li>
<li>Add the chopped bacon to a large skillet over medium heat. Cook until the bacon is crisp, then remove it from the pan with a slotted spoon. Set it aside in a bowl for later.</li>
<li>Add the sliced mushrooms to the bacon grease and spread in an even layer. Cook over medium heat until browned on both sides.</li>
<li>Add the minced garlic, thyme leaves, and white wine and stir for 1 minute to cook off the alcohol, scraping any bits from the bottom of the pan.</li>
<li>Add the coconut cream, <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a> arrowroot starch, sea salt, pepper and cooked bacon.</li>
<li>Stir well to dissolve. Simmer for 5-10 minutes, or until the sauce has thickened to the consistency of thick gravy.</li>
<li>Drain the green beans and shake most of the water off. Add them to the pan of sauce, cover with a lid and turn the heat to low to warm the beans through.</li>
<li>Prepare the Crispy Onions (recipe below) while the beans are warming.</li>
<li>Pour the beans and sauce out into a serving dish and top with the crispy onions. Serve immediately.</li>
</ol>
<p><strong>CRISPY ONIONS</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2 large shallots</li>
<li>3 T arrowroot starch</li>
<li>avocado oil, for pan frying</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Heat a large skillet over medium heat. Add enough avocado oil to cover the bottom with about 1″ of oil.</li>
<li>Peel the shallots and slice them thinly into rings (a mandolin works really well here). Add the shallot slices to a large bowl and separate the inner rings of each slice. Add the arrowroot and toss well until each ring is coated evenly.</li>
<li>Once the avocado oil is hot, pan fry the onion rings in batches. Watch for them to turn golden brown and remove them from the pan onto a cooling rack over some paper towels to catch the grease.</li>
</ol>
<p><strong>MAPLE GLAZED CARROTS</strong></p>
<p><em>Yields 4 Servings</em></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>1 lb. carrots</li>
<li>2 T avocado oil</li>
<li>2 T maple syrup</li>
<li>2 scoops <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a></li>
<li>1 T rosemary</li>
<li>1 T parsley (chopped)</li>
<li>¼ C pomegranate</li>
<li>Salt and pepper to taste</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 400°F.</li>
<li>Line a baking dish with parchment paper. Add carrots and drizzle oil and maple syrup. Mix together with the <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a> and add rosemary, salt and pepper.</li>
<li>Bake in the oven for 25-30 minutes or until soft.</li>
<li>Remove from oven, top with fresh parsley and pomegranate and enjoy!</li>
</ol>
<p><strong>MASHED POTATOES RECIPE</strong></p>
<p><em>Yields around 5-6 servings </em></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2 lbs. russet potatoes (skin left on, cubed)</li>
<li>3 bacon strips (cooked and chopped)</li>
<li>1 T minced garlic</li>
<li>¼  C avocado oil</li>
<li>½ C almond milk</li>
<li>2 scoops <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a></li>
<li>¼ C green onion</li>
<li>1 T fresh parsley (chopped)</li>
<li>Salt and pepper to taste</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>In a large pot, add water and bring to a boil.</li>
<li>While the water is being boiled, chop the potatoes and add to the boiling water. Boil the potatoes for about 10-12 minutes or until soft.</li>
<li>As the potatoes are being boiled, add the bacon strips to a pan and cook until done.</li>
<li>Once the potatoes are soft, strain the water and add the potatoes back into the pot.</li>
<li>Add in the oil, milk and <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a> and mix together with a potato masher. Then add in the green onion, salt and pepper and mix until combined.</li>
<li>Lastly, add the mashed potatoes to a dish and garnish with bacon bits and parsley.</li>

<li>1 lb. brussels sprouts (halved)</li>
<li>4 slices bacon (sliced)</li>
<li>1 garlic clove (minced)</li>
<li>2 T avocado oil</li>
<li>1/3 C pecans (chopped)</li>
<li>1 T fresh parsley</li>
<li>2 scoops <a href="https://us.shaklee.com/Nutrition/Targeted-Solutions/Aging-Well/Collagen-9%E2%84%A2/p/21409?sponsorId=Ac9KvxX5dbwDSHXD4tsGYg%3D%3D&amp;pwsName=pamhoffmann">Shaklee Collagen 9</a></li>

<li>To mix your coffee and protein into a delicious frappé, use a blender that is powerful enough to chop ice. Add the ice first and partially chop, then add your milk and continue blending until smooth. Only after the milk and ice are smooth do you add the protein powder and your fixings.</li>

										<content:encoded><![CDATA[<p>Vitamin C, or ascorbic acid, is a nutrient that we often associate with supporting our immunity, but it actually does a lot more than that. Let’s talk about the many ways that vitamin C benefits us and how and when we should eat or take our vitamin C.</p>
<p><strong>What makes vitamin C an essential nutrient?</strong></p>
<p>First, as with many vitamins, the body can’t produce its own vitamin C. Secondly, the body can’t store a significant amount of vitamin C. Though very little is stored, the highest concentrations are in the white blood cells, eyes, adrenal glands, pituitary gland, and brain. Any vitamin C that isn’t quickly used by our body gets excreted in our urine since it is a water-soluble vitamin. Remember these two factors for later.</p>
<p><strong>How does vitamin C benefit you?</strong></p>
<ol>
<li>It is a powerful antioxidant that can help neutralize harmful free radicals. Some of vitamin C’s antioxidant properties have been linked to reduced cancer risk. For example, vitamin C has been linked to limiting the formation of carcinogens in the body. Also, studies have found an inverse association between dietary vitamin C intake and cancers of the lung, breast, colon or rectum, stomach, oral cavity, larynx or pharynx, and esophagus. (<a href="https://ods.od.nih.gov/factsheets/VitaminC-HealthProfessional/" target="_blank" rel="noopener">1</a>)</li>
<li>Vitamin C is needed to make the powerful fiber collagen. Collagen is a fibrous protein in connective tissue that is used throughout various systems in the body: skin, nervous, immune, bone, cartilage, blood, and others. Without enough vitamin C, your body will struggle to make and regenerate these critical cells and tissues. (<a href="https://ods.od.nih.gov/factsheets/VitaminC-HealthProfessional/" target="_blank" rel="noopener">1</a>)</li>
<li>As we learned earlier, vitamin C is found at higher concentrations in white blood cells, which play a critical role in our immune system. Additionally, vitamin C may help reduce the severity of allergic reactions. (<a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3783921/" target="_blank" rel="noopener">3</a>)</li>
<li>Vitamin C improves the absorption of non-heme iron, the type of iron found in plant foods such as leafy greens. (<a href="https://pubmed.ncbi.nlm.nih.gov/6940487/" target="_blank" rel="noopener">4</a>) Having vitamin C at the same time as non-heme iron can help boost your body’s iron absorption.</li>
<li>Finally, vitamin C helps make several hormones and chemical messengers used in the brain and nerves (<a href="https://www.hsph.harvard.edu/nutritionsource/vitamin-c/" target="_blank" rel="noopener">5</a>) and plays an important role in a number of metabolic functions, including activation of the B vitamin folic acid. (<a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3783921/" target="_blank" rel="noopener">3</a>)</li>
</ol>
<p><strong>How much vitamin C do you need?</strong></p>
<p>The key is consistent daily intake. We learned earlier that our bodies can’t make or store vitamin C very well, which means we need to get this nutrient daily. And how much vitamin C is enough?</p>
<p>Meeting the RDA does not require supplements, study results indicate that supplementation with 1,250 mg/day ascorbic acid produces about two times higher vitamin C concentrations than those seen with consumption of 200–300 mg/day ascorbic acid from vitamin C-rich foods. <p><strong>How much water do I need? </strong>You probably know by now you need to drink water every day. The most common recommendation is 6 to 8 glasses of water a day, 8 ounces each. This is a good goal to maintain, but keep in mind that everyone has different hydration needs depending on various factors like age, weight, amount of physical activity, and climate. You may need more than 8 glasses of water a day, especially if your lifestyle is very active. The best thing you can do to know how much water you need is to listen to your body’s signals like thirst, dry mouth, fatigue, darker-colored (more concentrated) urine, headache, dry skin, dizziness, and mental fogginess.</p>
<p><strong>What can I eat or drink to stay hydrated? </strong>Drinking water is the best way to stay hydrated, but there are other foods and drinks that help as well. Water can be found in fruits, vegetables, and foods like soup, sauces, and gravies. Juices, milk, tea, and even coffee contain water that helps with hydration. However, food and drinks other than water can contain things that  can counteract hydration.</p>

While the brain is responsible for your emotions, your gut is actually connected to your brain through nerve connections, hormones, cytokines, neurotransmitters and certain metabolites that send messages. So the health of your gut plays a significant role in the health of your brain and your mood.</p>
<p><strong>Here’s how it works<br />
</strong>Your gut sends messages to your brain with neurotransmitters that may affect your mood, appetite, thoughts, emotions, and even sleep. And while there are many adjustments you can make to your lifestyle that can help reduce stress, like better sleep and exercise, there are also adjustments you can make to your diet that help as well. Here are a few tips on what to eat and what to avoid when managing your stress.</p>
<p><strong>The key is reducing cortisol</strong><strong> </strong></p>
<p>For stress management, you want to add food to your diet that helps reduce cortisol. Cortisol is the primary hormone responsible for stress. This hormone is actually released by your body to manage stress since it helps reduce inflammation, regulate sleep cycles, and control blood pressure, but it’s only meant as a short-term solution. In the long-term, an excess amount of cortisol creates more stress in the body and causes inflammation. In order for a food to reduce stress, it needs to help reduce inflammation and thereby reduce cortisol levels. Thankfully, you have a lot of options.</p>
<p><strong>Stress-reducing foods to add to your diet</strong><strong> </strong></p>
<ul>
<li><strong>Foods with vitamin B.</strong>Beef, chicken, eggs, and fortified whole grains are all sources of B vitamins that can help your body metabolize cortisol.</li>
<li><strong>Foods with omega-3 fatty acids.</strong>Omega-3s help reduce inflammation, and you can find them in fatty fishes like salmon, tuna, mackerel, and sardines. They can also be found in avocados, walnuts, flax seeds, and olive oil.</li>
<li><strong>Foods with magnesium. </strong>Magnesium helps relax your body and mind, reduce inflammation, and metabolize cortisol. You can find it in avocados, bananas, broccoli, spinach, and dark chocolate.</li>
<li><strong>Foods with protein. </strong>This one may surprise you, but meat, fish, poultry, beans, and legumes help balance blood sugar levels, which is key to managing stress.</li>

<p><strong>MANY HEART HEALTH FACTORS ARE WITHIN YOUR CONTROL </strong></p>
<p>Your Heart Health depends a lot on the choices you make every day and  here is a lot that is within YOUR control. Heart disease is America’s leading cause of death and while there are numerous factors that can increase your risk, the American Heart Association has found that 80% of heart attacks are preventable if people improve their eating habits, get to a healthy weight, exercise, and manage cholesterol and blood pressure.</p>
<p>We’re going to look at prevention—and the important role diet and exercise play in supporting a healthy heart.</p>
<p>To support a strong and healthy heart, first look at your diet. Healthy eating has a strong correlation with keeping your heart healthy. You want to keep your plate colorful with an antioxidant-rich diet and eat at least 5–7 servings of fruit and veggies every day avoid saturated fat (fatty meats, full-fat dairy, and fried foods).</p>

<li>To save time, you can “batch” steam and portion vegetables and smoothie ingredients all at once and store in individually portioned containers. “Batch,” as the name implies, is preparing and cooking many meals’ worth of ingredients all at once. Add any additional vegetables or fruit to your containers and refrigerate or freeze together for each individual Life Shake recipe. Freeze if you want to use the ingredients in a few days to reduce oxidation. Take your portioned smoothie ingredients out of the freezer and place into the fridge for a few hours before you plan to blend.</li>
<li>Another time-saving option is to purée vegetables and fruit and freeze in ice cube trays. Using a high-powered blender, you can add the ice cubes of vegetables and fruit into the blender, add other ingredients, and blend. If you don’t have a high-powered blender, take the portion of cubes out of the freezer to let them thaw a little before blending.</li>
<li>Don’t like bananas? Swap out banana with jicama, carrots, pears, apples, or cooked sweet potato for a sweet and nutritious boost.</li>
<li>What can boost the creamy texture without adding cream? Cauliflower, broccoli, banana, avocado, sweet potato, pumpkin, even butternut squash. If you are having a hard time making your vegetables creamy, cook them a little longer. They should be soft without any “bite.” And to avoid overcooking your vegetables, cook them in uniform pieces and test multiple pieces. Blend on low to chop vegetables and then on medium or high to make smooth.</li>
